1/2 C flour
1/8 tsp salt
1/2 tsp baking powder
1/3 C milk
1 egg
1/2 tsp melted butter
1 1/2 C raw, green corn kernels

Sift together the flour, salt and baking powder. Beat in the milk. Add the egg, beaten until light, Stir in the butter and and mix well. Add the corn and fry patties medium sized tablespoons of the batter in fat about 3/4 inch deep in the pan. Allow 5 minutes per side to brown and cook the fritters. Drain well on absorbent paper. May be served with maple syrup if desired.
