Cucumber Namasu

3 cucumbers, sliced
2 stalks celery, chopped
grated carrot for color
1 tsp sugar
salt
1/4 C sugar
1/4 C vinegar
1 grated toe of ginger
1/2 tsp salt
lemon juiceRecipe
Combine cucumbers, celery and carrot. Sprinkle with sugar and salt. Mix and chill 1/2 hour to overnight. Squeeze out excess liquid. Make a sauce of 1/4 c sugar, vinegar, ginger, 1/2 tsp salt and lemon juice to taste. Bring it to a boil and pour over the vegetables. Serve as a vegetable, appetizer or salad.
