Gingered sugar snaps

- 1 T vegetable oil
- 1 pound sugar snap peas, strings removed
- 1 one inch piece fresh ginger, peeled and finely chopped
- 1/4 C water
- Coarse salt
- Freshly ground pepper
Instructions
- In a 12 inch skillet, heat oil over medium high heat. Add peas and ginger. Cook, stirring occasionally, until peas begin to brown. about 5 minutes.
- Add the water, reduce heat to medium. Cook, stirring and scraping up ginger from the bottom of pan with a wooden spoon, until peas are crisp-tender, about 2 minutes.
- Season with salt and pepper.
