    Gingered sugar snaps

    • 1 T vegetable oil
    • 1 pound sugar snap peas, strings removed
    • 1 one inch piece fresh ginger, peeled and finely chopped
    • 1/4 C water
    • Coarse salt
    • Freshly ground pepper


    Instructions


    1. In a 12 inch skillet, heat oil over medium high heat. Add peas and ginger. Cook, stirring occasionally, until peas begin to brown. about 5 minutes.

    2. Add the water, reduce heat to medium. Cook, stirring and scraping up ginger from the bottom of pan with a wooden spoon, until peas are crisp-tender, about 2 minutes.

    3. Season with salt and pepper.
