Green Beans With Bacon and Parsley

List of Ingredients
6 slices bacon, chopped
2 pounds fresh green beans
1/3 C bacon fat
3 scallions with tops, chopped
2 tsp, chopped parsley
3/4 tsp salt
3/4 tsp black pepper
4 T wine vinegarRecipe
Saute bacon until crisp, drain and reserve the fat. Snap tips off of beans. Bring 2 inches of salted water to a boil in a large saucepan. Add the beans and return to a boil. Cook 5 minutes. Reduce heat, cover and cook 8 minutes longer, or until tender but firm. Drain beans.
Saute them in the bacon fat for 3 minutes.
Place scallions, parsley, salt, pepper and vinegar in a small jar. Cover and shake thoroughly. Toss with the beans and serve hot.
