    2 pounds of greens serves 4

    Recipe



    Beet tops, chicory (outer leaves), collards, escarole, lettuce (outer leaves), spinach, kale, Swiss chard, mustard greens, turnip greens.
    Remove root ends and bad leaves. Wash in several waters, drain.
    Cover and cook with just the water that clings to it.
    Beet tops 5-15 minutes
    Chicory, escarole, lettuce mustard greens ans chard 15-20 minutes.
    Kale and turnip greens 15-25 minutes.
    Drain.
    Microwave; 15-18 minutes with the water that clings to it. Stir every 6 minutes. Let stand covered for 1 minute. Drain.
