    1 T butter
    1 celery stalk, trimmed and chopped
    1 jalapeno chile, cored, seeded and minced
    1 T all purpose flour
    1 C milk
    1 C corn kernals (from 2 ears)
    1 heaping C cubed ham, (6-oz)
    2 T minced fresh chives
    2 T mascarpone cheese or whipping cream (opt)
    1 tsp minced fresh thyme
    salt and pepper

    Recipe



    Melt butter in a small saucepan. Add celery and chile and saute 2-3 minutes. Stir in flour and mix to form a paste. Cook for a few minutes to eliminate raw taste. Stir in milk, mixing well until sauce is slightly thickened. Add corn, ham, chives and cheese or cream. Add thyme. Cover and simmer about 10 minutes or until corn is tender, Season to taste.
