12 medium beets
3 T butter
1 T cornstarch
1/2 C brown sugar
1/4 C white wine vinegar
juice of 1 orange
salt
pepper
nutmeg to tasteRecipe
Boil beets, simmer 30-45 minuted. Drain, reserving 1 1/2 C cooking water.
Peel and dice or slice cooked beets.
Melt butter over low heat in saucepan. Whisk in remaining ingredients and beet water, until mixture is thick. Add beets and stir to coat.
