    List of Ingredients




    1 onion, chopped
    3 T butter
    1 pound Kale, well washed and coarsely chopped
    1/4 tsp salt
    4 eggs

    Recipe



    Saute onion in butter until golden. Add kale and salt, saute covered about 15 minutes or until tender. Beat eggs lightly and add to cooked kale, stirring until well mixed. Cook over moderate heat until eggs set. Serves 4.
