    Maitake Mushroom and Asparagus Saute

    List of Ingredients


    • 1 package Eden maitake mushrooms,(25 grams)
    • 20 whole asparagus spears ( 1bunch)
    • 2 cloves garlic minced
    • 1 T Eden extra virgin olive oil
    • 1 T fresh grated ginger root (squeeze out juice, discard pulp)
    • 1 T Eden shoyu soy sauce, or to taste
    • 1/2 C water


    Instructions


    1. Place maitake in a bowl of warm water to cover and soak for 10 minutes. Remove, drain and reserve water to use as part of the cooking liquid.

    2. Heat oil in the skillet, saute the garlic and maitake for 2-3 minutes. Add the asparagus, shoyu and water. Cover and simmer for 3-5 minutes.

    3. Remove cover and pour ginger juice over the asparagus. Saute for another 1-2 minutes, stirring ocassionaly. Serve hot.
