Maitake Mushroom and Asparagus Saute

List of Ingredients
- 1 package Eden maitake mushrooms,(25 grams)
- 20 whole asparagus spears ( 1bunch)
- 2 cloves garlic minced
- 1 T Eden extra virgin olive oil
- 1 T fresh grated ginger root (squeeze out juice, discard pulp)
- 1 T Eden shoyu soy sauce, or to taste
- 1/2 C water
Instructions
- Place maitake in a bowl of warm water to cover and soak for 10 minutes. Remove, drain and reserve water to use as part of the cooking liquid.
- Heat oil in the skillet, saute the garlic and maitake for 2-3 minutes. Add the asparagus, shoyu and water. Cover and simmer for 3-5 minutes.
- Remove cover and pour ginger juice over the asparagus. Saute for another 1-2 minutes, stirring ocassionaly. Serve hot.
