Parsley Potatoes

4 large baking potatoes
water
salt
1 medium onion, chopped
1 garlic clove, pressed
1/2 C chopped parsley
3 T oil
1 1/4-1 1/2 C broth
salt, to taste
pepper to tasteRecipe
Peel and slice potatoes thickly, quarter if desired.
Saute onion, garlic and parsley for 5-10 minutes, over medium low heat, until soft but not browned.
Drain potatoes and add to skillet, saute 5 minutes, stirring occasionally.
Add broth and bring to a boil, lower heat and simmer 20 minutes.
