Peas Florentine-Style

2 whole cloves garlic, peeled
3 T olive oil
2 T prosciutto or pancetta, 1/4 inch dice
2 pounds shelled fresh peas
2 T finely chopped parsley
salt
ground pepperRecipe
Over medium-high heat, saute whole garlic in olive oil until browned. Remove garlic and add prosciutto, saute less than 1 minute. Add peas, parsley, salt and pepper.
Turn heat to medium. Add 2-3 T of water and cover the pan. Cook 5-10 minutes or until peas are just tender.
