    4 C cold, leftover mashed potatoes
    1/4 C all-purpose flour
    2 T each chopped green onion, and red bell pepper
    1/2 C grated Cheddar or Parmesan cheese
    1 egg, lightly beaten


    Recipe



    Coat waffle iron with cooking spray. Preheat to manufacturers directions. Combine potatoes and remaining ingredients. Mix well. spoon one quarter cup of mixture onto waffle iron and bake until golden brown, repeat to make 16.

    Serves 8
