List of Ingredients
- 4 medium yukon gold potatoes
- 1/4 C hot milk
- 2 T butter
- 1/2 C grated carrots
- 1/4 C finely chopped onion
- 1/4 C chopped green onions
- 2 T freshly chopped parsley
- 2 T all-purpose flour
- 1 tsp salt
- 1/4 tsp pepper
- 2-3 T oil
Instructions
- place whole unpierced potatoe in microwave safe dish. Cover dish. If you use plastic wrap pierce it once. Microwave on high for 9 minutes, or until potatoes are done. Carefully remove from oven, watch for steam. Mash with the butter, milk, salt and pepper to taste.
- Combine potatoes with, carrots, onion, parsley, flour,salt and pepper. Mix well.
- In large fry pan, heat canola oil. Spoon about 1/3 cup for each pancake and cook over medium heat for 3-4 minutes per side, or until cooked through and golden brown. Add additional oil as needed.
