    List of Ingredients


    • 4 medium yukon gold potatoes
    • 1/4 C hot milk
    • 2 T butter
    • 1/2 C grated carrots
    • 1/4 C finely chopped onion
    • 1/4 C chopped green onions
    • 2 T freshly chopped parsley
    • 2 T all-purpose flour
    • 1 tsp salt
    • 1/4 tsp pepper
    • 2-3 T oil


    Instructions


    1. place whole unpierced potatoe in microwave safe dish. Cover dish. If you use plastic wrap pierce it once. Microwave on high for 9 minutes, or until potatoes are done. Carefully remove from oven, watch for steam. Mash with the butter, milk, salt and pepper to taste.
    2. Combine potatoes with, carrots, onion, parsley, flour,salt and pepper. Mix well.
    3. In large fry pan, heat canola oil. Spoon about 1/3 cup for each pancake and cook over medium heat for 3-4 minutes per side, or until cooked through and golden brown. Add additional oil as needed.
