    List of Ingredients




    1 medium russet potato per person
    1 egg per person

    Recipe




    Pierce the potatoes and micro about 5 minutes each. (or until done, checking at 1 minute intervals). Do not cut the potato all the way from end to end. Push the ends together to open the cut. Crack an egg into each well made in center of each potato and pierce the yolk several times with a toothpick. Micro on medium high for three and a half to four minutes.. Let stand 1 minute if yolks are not done.

    Variation;
    Bacon. Scoop out most of pulp. Mix with 1 T butter and 1 T milk, 1 T cheese, a little scallion and 1 slice chopped bacon.
    Return to potato and micro for the 3 1/2-4 minutes.

    Ham and cheese. about 1 ounce chopped ham and 2 T cheddar cheese.

    Salmon. 1 oz cooked and flaked salmon, and 1 oz sour cream.

    Garnish any of the above with chives and parsley.
