    Sausage-stuffed butternut squash

    3 medium butternut squash, cut in half lengthwise
    1 pound Italian sweet sausage
    1 lrg onion, chopped
    1 clove garlic, minced fine
    8 slices bread, in 1/2 inch cubes
    1/2 C chopped fresh parsley
    2 eggs, beaten

    Recipe



    Remove seeds from squash, Place cut side down in a greased shallow baking pan. Bake in a 350 degree oven 50 minutes or until squash is easily pierced. Meanwhile, remove sausage from casings and fry golden brown and crumbly. Add onion and garlic. Saute until onion is soft. Add bread, parsley and eggs. Remove from heat. Mash squash if desired and spoon sausage over. Return to oven and bake 15 minutes or until top is golden brown.
    Serves 6 as a main coarse, more as a side dish.
