Spaghetti Squash and cheese

List of Ingredients
1 spaghetti squash, about 9 inches long
basil pesto
1 1/2-2 C Holland Parrano cheese, gratedRecipe
Cut the squash lengthwise. Place cut side down in a greased bake dish. Bake the squash 30-45 minutes or until a knife inserted into the skin gives little resistance.
Place on a plate cut side up and put 2-4 tsp pesto on each half, just to give a little flavor. Fluff the squash with a fork in a scraping motion to release the "strings" of the squash and mix the pesto in some. Top with the cheese and serve hot. Salt and pepper if desired.
