Squash with Lentils

List of Ingredients
1 C red lentils
3 C water
1 tsp salt
2 T olive oil
1/3 C lime juice
1 garlic clove, pressed
1 T parsley
1 1/2 tsp spice blend (recipe follows)
3/4 C onion
1 winter squash
Recipe
Cook the lentils, and other ingredients, except the winter squash, for 20 minutes or until they are tender but keep their shape.
Halve the squash. Place in a baking dish and fill with the lentils, using a slotted spoon to avoid picking up too much liquid.
Bake at 350 degrees F for 25-30 minutes. (for an acorn squash).
Spice Blend;
1 T cinnamon
1 bay leaf
3 cloves
1 T cumin
1 T coriander
2 tsp pepper
6 cardamom pods
1 tsp nutmeg
grind in a spice grinder and store in a bottle.
