String Beans

String and cut fresh beans. Wash thoroughly and drain. Place 2 T oil in kettle with 2-3 thinly sliced scallions and saute. Add beans and place lid on, cook over low heat, 10 minutes. Shake pan occasionally to prevent burning. Season to taste, add 1/2 C water. Cover and cook 15-25 minutes. Top with slivered almonds for a garnish.
If you aren't counting calories, My mother made a similar recipe to this except that she used crisp fried bacon or boiled and shredded ham hocks when the water was added, as well as the almonds.
