Sunchoke Potatoe Gratin

Serves 6-8
List of Ingredients
1 pound sunchokes
1 pound yellow potatoes
2 tsp salt, divided
1 T butter, +
1/2 C chopped shallots
2 cloves garlic, minced
1 C heavy cream
1 tsp dried thyme
1/3 C bread crumbsRecipe
Peel (I never do)and slice the sunchokes and potatoes thinly (1/8 inch).
Parboil with 1 tsp salt about 5 minutes. Drain well and rinse with cold water.
Melt butter in a small skillet, over medium heat. Saute shallots and garlic until translucent
In a mixing bowl, mix shallots and garlic with cream, thyme and 1 tsp salt.
Grease a 9x15 baking dish with butter. Spread sunchoke-potatoe mixture in bottom evenly.
Bake 400 degrees F. for 20-25 minutes until top begins to brown. Sprinkle with bread crumbs. Cook another 5 minutes, until well browned and tender.
