3-4 large potatoes, peeled
2 C flour
1 T salt
2 tsp paprika
1/2 tsp pepper
2 eggs
2 T milk

Cut potatoes in 1/2 inch by 1 inch strips. Soak in cold water 20 minutes, change water once. Drain and pat dry. Combine flour and seasonings in a bag. Dredge potatoes in the flour. Dip into egg beaten with milk. Dredge again. In skillet, 1/3 full of oil at 375 degrees, fry small batches of potatoes until golden brown, turn once. keep warm in 200 degree oven until all are done.
