    Preheat oven to 400 degrees F.
    Serves 4.

    List of Ingredients




    2 sweet potatoes (12 oz each)
    1 T olive oil
    1/2 yellow onion, diced
    3/4 C stemmed and chopped Tuscan kale
    1/4 C plain Greek yogurt
    1/4 C grated Parmigiano Reggiano cheese
    2 tsp chopped fresh thyme
    1/2 tsp salt
    1/2 C crumbled feta cheese

    Recipe



    Prick potatoes with a fork. Roast in a baking pan until tender, 45-60 minutes. Let cool about 20 minutes.

    Heat a skillet over medium low heat. Add olive oil and diced onion, saute until soft. Add kale and saute until wilted.

    Slice sweet potatoes into halves lengthwise. Scoop out pulp, saving skins. Combine the pulp, with remaining ingredients, except the feta cheese. refill the skins with the pulp mixture and top with bits of feta cheese. Bake another 20 minutes until potatoes are warmed. Let cool 5 minutes then serve.
