Cream of salsify soup

List of Ingredients
- 3 C sliced salsify soup
- 3 C water
- 1 tsp chopped onion
- 1 C soy milk
- salt to taste
- 1 T flour
Instructions
- Wash, trim,scrape and very thinly slice salsify, drop into acidic water (1 tsp vinegar to a quart of water)
- Put the water in a kettle and add, salsify, onion and salt. Boil until tender.
- Mash or puree. Strain through a medium strainer. add back to pan. Stir 1 tablespoon of flour into the soy milk and add to the soup. Reheat to thicken. Season and serve.
