    List of Ingredients


    • 1/2 pound dry black beans
    • 1/4 C olive oil
    • 1 large onion, chopped
    • 1 4-oz jar pimientos
    • salt
    • 2 T cooking wine
    • 1/8 tsp oregano
    • 1 1/2 tsp sugar


    Instructions


    1. Soak beans in 4 cups water 1 hour. Drain, gently cook beans until tender. Add more water if necessary.
    2. Drain beans, reserving liquid.
    3. Saute onion in oil, add pimientos and cook a few seconds. Pour in beans and season with with salt, wine, oregano and sugar.
    4. Simmer over medium heat until creamy, add bean liquid if necessary.
