    Lentil Wraps

    List of Ingredients




    1 can lentils, drained (or 2 C cooked)
    3 strips bacon, cut up
    1 large stalk celery, diced
    1/2 carrot, grated
    2 scallions, sliced
    2 C rice
    5 eggs
    Sour cream
    8 large wraps

    Recipe



    Fry the bacon and crumble if desired, or cut it up and fry it.
    Remove bacon from pan and set aside.
    Add the celery to the bacon fat in the skillet and cook about 1 minutes. Layer the carrots on top of the celery and cook 2 minutes. Add onion and saute or scallion and don't saute, now if desired and the bacon. Stir. Remove pan from heat. and let cool.
    Meanwhile cook rice according to package directions, ending with 2 cups cooked rice. Let cool.
    Scramble the 5 eggs with salt and pepper, adding a little milk as desired (or try soy sauce). Just cook the eggs so as not to dry them out. Remove from heat.
    Having the 8 wraps laid out on the counter, They will take it all, place one eighth of the lentil mixture on each. Then one eighth of the rice. Same for the eggs. add a dollop of sour cream. Roll them up by flipping the bottom of the wrap up over the filling a little ways. Then roll from one side to the other to envelop the filling. Reheat the wraps in the microwave as you would a burrito, or steam them, or fry in a pan just to
    heat through.

    Options;
    This was a basic recipe with what I had in the kitchen. Also try roasted peppers,or red pepper flakes, Or slivered ginger, etc....
