Avocado-Feta Salsa

I had part of a tomato, a small amount of feta cheese, and an avocado that was on it's last leg, so I mixed up a small bowl of this and it was wonderful! I didn't measure anything and just did it "to taste". I skipped the parsley and just sprinkled in some garlic powder instead of using fresh garlic. And I added some freshly ground black pepper. I ate it w/Triscuits for my lunch. Yum!
List of Ingredients
4 plum tomatoes -- chopped
2 tablespoons finely chopped red onion
2 garlic cloves -- minced
1 package crumbled feta cheese -- (4-ounce)
1 tablespoon chopped fresh parsley
3 tablespoons red wine vinegar
2 tablespoons olive oil
1/2 teaspoon dried oregano
1/2 teaspoon salt
2 avocados -- chopped
Assorted tortilla chipsRecipe
Stir together first 9 ingredients. Gently stir in avocado just before serving. Serve with assorted tortilla chips.

NOTES : Make this salsa shortly before serving for best results. Avoid refrigerating it--the texture of the tomatoes will soften.
