    Black Bean Salsa

    I adapted from an internet recipe

    Recipe Introduction


    A nice healthy dip to serve with tortilla chips. It can also be served as a salad.

    List of Ingredients




    1 cup frozen corn, thawed and drained
    1 cans black beans, rinsed and drained
    1/2 small to medium red onion, chopped small
    4 small roma tomatoes, chopped
    1/3 c. fresh cilantro, minced, use more or less to taste
    1 T. pickled jalapeno, minced (or use fresh)
    4 T. fresh lime juice
    2 T. olive oil
    1 T. red vinegar
    1 T. honey, approx.
    1 t. Kosher salt
    1/4 t. fresh ground pepper
    1 avocado

    Recipe



    Mix first 6 ingredients in a bowl (corn through jalapeno).

    In a small bowl, mix everything else except the avocado.

    Toss everything together (except the avocado) and chill several hours or overnight.

    Before serving, dice the avocado and add it to the dip. Serve with tortilla chips.
