Apple Streusel Baked Oat Pancake

This was wonderful!! It was kind of like a cross between a coffee cake, apple crisp, and pancakes. Yum! My notes are at the bottom.

STREUSEL
1/2 cup Quaker® Oats (quick or old fashioned, uncooked)
1/4 cup all-purpose flour
1/4 cup firmly packed brown sugar
3 tablespoons butter, melted
PANCAKE
4 tablespoons (1/2 stick) butter, cut into pieces
1/3 cup granulated sugar
1 teaspoon ground cinnamon
3 medium tart apples (about 1-1/4 pounds), cored and cut into thin wedges
1 cup all-purpose flour
1/2 cup Quaker® Oats (quick or old fashioned, uncooked)
1 teaspoon baking powder
1/4 teaspoon salt (optional)
1 cup fat-free milk
1 egg, lightly beaten Recipe
For streusel, combine oats, flour, brown sugar and melted margarine in small bowl; stir until crumbly. Set aside.
Heat oven to 350°F. For pancake, place margarine into 8-inch square glass baking dish. Bake 3 to 5 minutes or until butter is melted. Remove from oven. Stir in granulated sugar and cinnamon. Add apples; stir until apples are well coated with sugar mixture. Bake 10 to 15 minutes or until apples have softened, stirring occasionally.
In large bowl, combine flour, oats, baking powder and salt; mix well. In small bowl, combine milk and egg; blend well. Add to dry ingredients all at once; stir just until dry ingredients are moistened. (Do not overmix.) Spoon over apple mixture in baking dish, spreading batter to sides of dish. Sprinkle reserved oat streusel evenly over batter.
Bake 25 to 30 minutes or until toothpick inserted in center comes out with a few moist crumbs clinging to it. Serve immediately.

Notes: I actually followed the recipe, well, for the most part. My only changes: added a tsp. of vanilla to the milk (used 1%) and egg mixture; grated a little fresh nutmeg in with the apples; used 4 apples instead of 3 (2 tart golden delicious and 2 gala--I used what I had on hand). I think that's it. I didn't want to alter it too much since I don't have a lot of experience with baked pancakes. I might reduce the butter a little bit and maybe use 1/2 whole wheat pastry flour next time. I don't want to mess with it too much though, since it turned out so good. I might try reducing the butter by 1/2 to 1 TBS. in the streusel and reducing 1 to 2 TBS. in the apple mixture, max! I wouldn't cut it any further than that. And yes, I will definitely be making this again. I warmed some up for breakfast this morning and it was surprisingly still delicious.
This would be great for a brunch or for over-night guests. We also didn't get 8 servings. 3 of us ate on it last night and there were 2 servings left this morning. I served it with bacon and grapes. Well, my husband cooked himself an egg to go with it, too.
