    Baked Cranberry Walnut Apples

    I think this is definitely one of those recipes you can play around with...adding more or less of the ingredients to taste. See my notes at the bottom.

    List of Ingredients




    2 cups dried cranberries
    1 1/4 cups coarsely chopped walnuts
    1 cup packed brown sugar
    1 cup water
    2 teaspoons ground cinnamon
    6 Gala Apples -- cored and chopped(about 3 pounds)

    Recipe



    Combine all ingredients in a large microwave-safe dish. Microwave at high 20 minutes or until apples are soft, stirring occasionally.

    Yield: 6 cups (serving size: 1/4 cup)

    NOTES :
    I cut the recipe in half and used 2 galas and 1 granny smith; I only used 1/2 cup cranberries and about 1/3 cup walnuts; used apple cider in place of the water so I reduced the brown sugar to 1/3 cup; added 1/2 t. cornstarch; I added freshly grated nutmeg and increased the cinnamon a tad; I buttered my dish with real butter and baked it in the oven for 25 minutes.

    This was very good. The walnuts, cranberries, and brown sugar could be reduced even further if desired.

    Notes from the magazine: Chop the nuts and apples the night before, and combine with the rest of the ingredients in the morning. Serve these juicy baked apples over slices of Spiced Pumpkin Bread, warm bowls of oatmeal, or pancakes. Ida Red and McIntosh apples also work well.
