Ham and Cheese Crustless Quiche

I came up w/this recipe by adapting a couple of other recipes

I actually serve this for dinner rather than breakfast. You could also bake this in a square or rectangular pan and cut into squares for appetizers. Or maybe even make mini quiche in a mini muffin pan. My husband really loves this!
List of Ingredients
6 large eggs -- beaten
1 cup small curd cottage cheese
1 can chopped green chiles -- (4 oz.)
1 1/2 cups grated cheese -- approx. ( I used a mix of sharp cheddar and mild cheddar. Could use pepper jack, mozzarella, mont. jack, etc. although I really liked the taste of the sharp cheddar)
3/4 cup diced ham -- approx. (cooked breakfast sausage would also be good--about 1/2 lb.?)
3 Tbs. or so minced or grated onion -- approx. (or could use green onion)
2 Tbs. melted butter
Franks Red Hot Sauce -- to taste
1/4 cup flour
1/2 tsp. baking powder
freshly ground black pepper -- to taste
1 pinch kosher salt
Parmesan cheese Recipe
Preheat oven to 375.
Mix eggs, cottage cheese, chiles, grated cheese, ham, onion, butter and hot sauce in large bowl.
In a small bowl, mix flour baking powder, pepper, and salt. Stir into egg mixture.
Pour into greased deep dish pie pan. Sprinkle or grate Parmesan over the top.
Bake about 33-35 minutes or until set and knife inserted in center comes out clean.
Let stand 10 minutes before cutting. Serve w/additional Frank's hot sauce.
NOTES : I came up with it by looking at 2 other recipes and using the things I had on hand. I served it for dinner w/Cinnamon Focaccia and sliced apples. Leftovers warmed up nicely. I think mushrooms would be delicious in this but I'm the only one who likes them around here. Or even drained spinach.
