Apple Pudding Cake

Recipe Introduction
A very rich, gooey, and delicious apple cake.
List of Ingredients
Cake:
2 medium tart apples -- peeled and chopped (2 to 2 1/2 cups)
1 cup sugar
1 egg -- lightly beaten
1 cup flour
1 teaspoon cinnamon
1/4 teaspoon freshly grated nutmeg -- (1/4 to 1/2 teaspoon)
1 teaspoon baking soda
Topping:
2/3 cup apple juice or apple cider
2 Tablespoons flour
1/4 cup packed light brown sugar
1/4 cup white sugar
2 Tablespoons butter (no substitutes)
1 teaspoon pure vanilla extract Recipe
Preheat oven to 350 degrees.
Mix apples and 1 cup sugar in a medium sized bowl. Let stand 10 minutes.
Stir in egg.
Mix dry ingredients in a small bowl and add to apple mixture, stirring until mixed.
Pour into greased 8 inch square pan.
Bake at 350º for 35 to 40 min.
Mix topping ingredients (except for vanilla) in a small saucepan and bring to a boil over medium heat, stirring frequently. Reduce heat and simmer, while stirring, for about a minute or so. Add vanilla. Pour over hot cake.
Serve warm. Store leftovers in the fridge and reheat in microwave.
Notes: Next time I might reduce the sugar even further (to cut more calories) by either slightly reducing the sugar in the cake OR maybe omitting the white sugar in the topping. Oh, and I think I will try apple cider in place of the apple juice next time. I'd like to say it makes 9 servings, but it only made about 6 for us.

Apple Cake

2 cups chopped apples
1 cup sugar--pour over apples and let stand 10 min.
Beat 1 egg and add to the above
Mix and add:
1 cup flour
1 tsp. cinnamon
1 tsp. baking soda
1/2 cup chopped nuts (optional)
Bake at 350º for 40 min. in an 8x8 pan (spray with Pam
( I used a 9x9 LeCreuset)
Topping
1/2 stick butter (1/4 C)
1 tsp. vanilla
2/3 c.apple juice
2 Tbsp. flour
1/3 cup brown sugar
1/3 c. white sugar
Cook until thick and pour over hot cake.
Excellent and easy... ( you may mix pears & apples)
