    Recipe Introduction


    This is a very good basic chocolate snack cake that you can throw together at a moments notice if you have a craving for chocolate. I liked it best served warm...and a little ice cream didn't hurt it either. And I'm not even one to eat ice cream and cake together, but it goes great with this. I also liked that it's just an 8 inch cake. I only like a dessert to sit around for 2 or 3 days and then I'm ready to move on to the next dessert recipe!

    List of Ingredients




    2 squares unsweetened chocolate -- (1 oz each)
    1 1/4 cups all-purpose flour
    1/2 teaspoon baking soda
    1/2 teaspoon salt
    1 cup sugar
    3/4 cup cold water
    1/3 cup vegetable oil
    1 teaspoon vanilla -- optional (my addition)
    1 cup semisweet chocolate chips

    Recipe



    In a microwave, melt chocolate; cool for 10 min. Combine the flour, baking soda and salt; set aside. In a mixing bowl, beat the egg and sugar. Beat in the water and oil. Stir in melted chocolate and dry ingredients; mix until well blended.

    Pour into a greased 8-inch sq baking pan. Sprinkle with chocolate chips. Bake at 350 degrees for 32-38 min or until a toothpick inserted near center comes out clean. Cool on wire rack.

    Yield: 9 servings

    NOTES : My flour mixture wouldn't mix into the wet ingredients smoothly. Next time I'll try to sift the dry ingredients over the wet. I had white clumps in the cake! It was still yummy. Moist and chocolatey. It's good warm with french vanilla ice cream. Warm leftovers in the microwave.
