Pillsbury "Get Togethers"
Recipe Introduction
I found this in one of those little Pillsbury cook-booklets that they have at the grocery store check-out. It's on the cover of "Get Togethers". It kind of tastes like raspberry sherbet. Really delicious! It could probably be made with other fruits...blueberry, peach, etc. but I really loved it with the raspberries. I served it after it had been in the freezer for about 5 hours and it was like soft-serve. Later that night it was more frozen. I think I liked it best when it was still a bit soft.
List of Ingredients
Crust:
1 cup crushed vanilla wafers -- (28 wafers) (I used graham cracker crumbs)
1/2 cup finely chopped almonds or macadamia nuts -- (I used almonds)
1/4 cup butter -- melted (I used about 2 1/2 Tbs.)
Filling:
1 can sweetened condensed milk -- (14 oz.) (I used low-fat)
3 Tbs. fresh lemon juice
3 Tbs. orange-flavored liqueur or orange juice -- (I used fresh orange juice)
1 pkg. frozen raspberries with syrup -- (10 oz.) thawed (I used a 12 oz. bag of plain frozen raspberries thawed with 1 Tbs. sugar)
1 cup whipping cream -- whipped (I whipped it with a tsp. of vanilla) Recipe
Heat oven to 375 deg. In a small bowl, mix crust ingredients (I did this in my food processor). Press firmly in bottom of ungreased 8-inch springform pan. Bake 8-10 minutes. Cool completely, about 30 minutes.
In a large bowl, beat sweetened condensed milk, lemon juice, and liquer or orange juice with electric mixer on medium speed until smooth. Add raspberries; beat on low speed until well blended. Fold in whipped cream. Pour over crust. Freeze atleast 2 hours until firm (after about 5 hours it was like soft-serve, so it needs longer than 2 hrs. in the freezer).
Just before serving, let stand at room temp. about 15 minutes or so. Store in freezer.
Serves 8-12
(recipe states 12 servings but we got more like 9 or 10)
