    Peach Crumb Pie

    List of Ingredients

    1 egg white
    1 unbaked pie shell
    3/4 cup flour
    1/2 cup brown sugar
    1/3 cup sugar
    1/4 cup chilled butter -- cut into pieces
    6 cups sliced and peeled fresh peaches (see hint at bottom)

    Recipe

    Beat egg white until foamy, brush over the bottom and sides of the pie shell.

    In a small bowl, combine flour and sugars; cut in butter until mixture resembles fine crumbs. Sprinkle 2/3 into the bottom of the shell.

    Top with peaches. Sprinkle with remaining crumb mixture.

    Bake at 375 for 40-45 minutes or until filling is bubbly and peaches are tender.

    Serving Ideas : Serve warm with vanilla ice cream.

    HINT: Plunge peaches in boiling water for about 30 seconds to 1 minute and then plunge immediately in ice water. The skins will slip off easily. A small x can be cut into the very bottom of the peach before dunking in the boiling water to make peeling even easier.
