    Recipe Introduction

    These are fantastic! I think these might have been my favorites of all the cookies that I made this holiday season (2009). Of course I love foods that are salty and sweet. I think they're supposed to taste similar to a Twix candy bar, and they kind of do, except for the peanut butter flavor. Delicious!

    List of Ingredients

    48-64 Keebler Club crackers

    Caramel:
    1 cup graham cracker crumbs
    2/3 cup sugar
    1/2 cup brown sugar
    1 stick unsalted butter (NO subs! Don't use margarine! Salted butter would probably be fine but omit the pinch of salt)
    1/4 cup milk
    pinch salt

    Frosting:
    1/2 cup creamy peanut butter
    1/3 cup semisweet chocolate chips
    1/3 cup butterscotch chips (I used milk chocolate chips instead)
    1/3 cup dry roasted peanuts, chopped (I didn't use)

    Recipe

    Arrange 1/2 the crackers in the bottom of a greased 9x13 pan, breaking a few to fit if needed. Cracks between the crackers are OK, just don't leave any gaping holes. The non-stick spray will keep any caramel that seeps through from sticking to the pan. Set pan aside.

    Boil all caramel ingredients (graham crackers through salt) in a saucepan over med/high heat for 3 minutes, or until sugars melt. Stir constantly to prevent scorching.

    Pour caramel over crackers and spread w/an offset spatula to cover evenly. Don't worry if caramel seeps between crackers--the bars will be fine. Top caramel with another layer of crackers, arranging them in the same manner as the first layer.

    Melt peanut butter and chips in a small saucepan over med/low heat until smooth (I just did this in a bowl in the microwave). Pour over crackers and spread w/an offset spatula.

    Sprinkle peanuts (if using) over the top and chill for atleast 2 hours. Can store in the fridge or at room temp. They still stay nice and chewy even when chilled.
