    Crispy S'mores Bars with Peanut Butter C

    List of Ingredients




    For the Base:
    1 stick unsalted butter, softened
    1/3 cup sugar
    1 egg
    1/2 tsp. vanilla
    2 cups graham cracker crumbs (about 18)
    1/3 cup flour
    pinch of salt

    For the Toppings:
    12-14 full size Reese's cups, quartered (I cut each into 6 pieces. And I used a 10.5 oz. package of Reese's which was 14, I think)
    1 1/2 cups mini marshmallows
    1/2 cup semi-sweet chocolate chips
    reserved graham cracker mixture

    Preheat oven to 350 degrees. Coat a 9x13 pan with Pam.

    Cream butter, sugar, egg, and vanilla in a bowl w/mixer. The mixture will look curdled and that's OK. Stir in graham cracker crumbs, flour and salt. Reserve 2/3 cup of this mixture for the topping.

    Press remaining mixture into the pan (layer will be thin). Bake for 15 minutes (Check early. I will do a bit less next time since I thought mine got too brown at 15 min) or until golden around the edges.

    Top hot base with Reeses, marshmallows, and chocolate chips; press lightly to adhere. Sprinkle reserved crumb mixture in clumps over the top and press lightly.

    Bake 18-20 minutes, or just until marshmallows are puffed and just beginning to turn light golden.

    Cool bars for atleast 30 min. before cutting. To prevent the marshmallows from sticking, coat the blade of the knife w/Pam before cutting, if desired.

    Notes: do not freeze and do not double
    I thought these were delicious and the kids loved them. They kind of tear up the roof of your mouth though. I did pack my graham cracker crumbs into the measuring cup (just to use up all the crumbs that I made), but next time I won't do that. I think it made the crust too dry. And I'll also bake the crust a bit less next time, too. I made them in a non-stick metal pan but will probably make them in a Pyrex pan next time. They were hard to cut and if they would have been in my glass pan, I could have used a sharper knife. Oh, and I ended up using 14 Reeses cups and my 2 cup measuring cup was slightly heaping.
