    Oatmeal Peanut Butter M&M Cookies

    This is one of our favorite cookie recipes. So good!

    List of Ingredients




    1/2 cup shortening
    1/2 cup unsalted butter -- softened
    1 cup packed light brown sugar
    3/4 cup white sugar
    1 cup peanut butter
    2 large eggs
    1 1/2 tsp. vanilla
    1 1/4 cups all-purpose flour (I use half white flour and half whole wheat flour or whole wheat pastry flour)
    1 1/2 cup old-fashioned oats (can also use quick oats)
    2 teaspoons baking soda
    1 teaspoon salt
    1 1/2 cups M&Ms, chocolate chips and/or chopped Hershey bars

    Preheat oven to 325 degrees F.

    In a large bowl, cream together shortening, butter, brown sugar, white sugar, and peanut butter until smooth. Beat in the eggs one at a time until well blended. Add vanilla.

    Combine the flour, baking soda, and salt and oats; stir into the creamed mixture. Stir in M&Ms.

    Drop by heaping spoonfuls (I use a cookie scoop) onto ungreased cookie sheets (I line mine with a silpat or parchmen paper).

    Bake for 11-13 minutes in preheated oven, or until just barely puffed and starting to turn light golden and dry around the edges. Don't over-bake. Cool on cookie sheets a few minutes and then remove to a cooling rack. Store in an airtight container.
