Recipe Introduction
These cookies are similar to Lofthouse cookies. Cakey and soft w/ a good flavor. I iced them w/ a buttercream frosting but they are also good plain. If you wanted them to be even more like Lofthouse cookies, use a thick glaze or royal icing instead of the buttercream. I'd love to try these w/ lemon zest added to the batter and iced w/ a lemon buttercream frosting.
List of Ingredients
3/4 cup butter -- softened
1 cup sugar
1 egg
1/2 teaspoon vanilla
1/2 cup heavy cream
2 3/4 cups flour
1/2 tsp baking soda
1/4 tsp saltRecipe
Cream the butter and sugar. Then added egg/cream/vanilla. Combine flour/soda/salt in a bowl. Stir into butter mixture. Form into balls (I use my cookie scoop) and place on cookie sheets lined w/ parchment paper. Flatten dough balls slightly w/ the palm of your hand. Bake at 350 degrees until light brown on the bottoms, approximately 10 minutes. Cool and frost.
Buttercream Frosting
1/2 lb powdered sugar
1/4 c butter -- softened
pinch salt -- optional
1 tsp vanilla
1-2 tbsps cream -- milk can be substituted
cream butter and powdered sugar. add salt and vanilla and enough cream (or milk) to reach desired spreading consistency.
