List of Ingredients
8 chicken thighs -- skin and fat removed
3/4 cup salsa
1/4 cup peanut butter
2 Tablespoons lime juice
1 tablespoon soy sauce
1 teaspoon grated gingerroot
1/4 cup chopped peanuts
2 tablespoons fresh cilantro
Serve over linguini or rice with lime wedgesRecipe
Place chicken in crockpot. Mix other ingredients except cilantro. Pour over chicken. Cook for 4 to 8 hours on low. Add cilantro before serving. Cooking time will depend on how hot your crockpot gets.

NOTES: I added crushed red pepper flakes and only used about 2 T. chopped peanuts and added them just before serving. I cooked up 8 oz. of linguini and added it to the chicken and sauce just before serving. Also served it with steamed broccoli. I would have added a red pepper to the broccoli but I didn't have one. Would also be good over rice.
