    Cheesecake Bars

    List of Ingredients

    1/3 c. cold butter (no substitutes)
    1/3 c. packed light brown sugar
    1 c. all-purpose flour
    1/2 c. chopped walnuts or pecans -- optional
    8 oz. cream cheese -- softened (I use light)
    1/4 c. granulated sugar
    1 large egg
    2 T. milk
    1 T. lemon juice
    1/2 t. vanilla
    1 can cherry pie filling -- optional

    Recipe

    Preheat oven to 350.

    In a bowl, combine flour and brown sugar; cut in butter until mixture resembles coarse crumbs. Stir in nuts, if using. Reserve 1 cup.

    Press remaining crumb mixture into bottom of an ungreased 8-inch square baking pan. Bake for 12 minutes.

    Meanwhile, beat cream cheese and sugar together in mixing bowl, until light and fluffy.

    Beat in egg. Add milk, lemon juice, and vanilla; beat until smooth.

    Spread cream cheese mixture over crust. Sprinkle with reserved crumbs.

    Bake for 25 to 30 minutes or until light golden brown at the edges and filling is almost set.

    Cool in pan on wire rack. Cut into squares.

    Serve with cherry pie filling, if desired.

    Store in refrigerator.


    Serves 12

    NOTES : Recipe can easily be doubled. Bake in a 9x13 pan.
