    Bacon-Topped Meat Loaf

    Taste of Home 2002 Annual Recipes, pg. 230

    List of Ingredients




    1/2 cup chili sauce (like Heinz)
    2 eggs -- lightly beaten
    1 T. Worcestershire sauce
    1 medium onion -- chopped
    1 cup sharp cheddar -- (4 oz.) shredded or cubed
    2/3 cup dry bread crumbs
    1/2 t. salt
    1/4 t. pepper
    2 lbs. lean ground beef
    2 bacon strips -- halved

    Recipe




    In a bowl combine the first 8 ingredients.

    Crumble beef over mixture; mix well but don't over-mix.

    Shape into a loaf in a 13x9x2 baking dish lined with foil. Top with bacon.

    Bake, uncovered, at 350 degrees for 70-80 minutes or until meat is no longer pink and a meat thermometer reads 160 degrees.

    Drain; let stand 10 minutes before cutting.


    NOTES : I added 1/2 t. garlic powder and about 1/4 t. ground chipotle powder.
