    Lil' Cheddar Meatloaves

    Recipe Introduction

    My family loves these. This will seem like a ton of sauce, but after they're baked it's perfect. I usually serve them with buttermilk mashed potatoes and corn.

    List of Ingredients

    1 egg
    3/4 cup milk, scant
    1 cup shredded sharp or extra sharp cheddar cheese (4 oz.)
    1/2 cup quick cooking oats
    1/2 cup chopped onion
    1 teaspoon kosher salt
    1/2 teaspoon dried garlic, optional
    1 lb. LEAN ground beef
    Topping:
    2/3 cup ketchup
    1/2 cup packed light brown sugar
    1 1/2 teaspoons prepared mustard
    ground chipotle, to taste (optional)

    Recipe

    In a bowl, beat the egg and milk.

    Stir in cheese, oats, onion, salt and garlic.

    Add beef and mix well.

    Shape into eight loaves; place in a greased 13 x 9" baking dish. (Line the dish with foil and spray with Pam for easy clean-up).

    Combine ketchup, brown sugar, mustard, and ground chipotle; spoon over loaves.

    Bake, uncovered, at 350 degrees for 45 minutes or until meat is no longer pink and reaches 160 degrees.
