Cheddar Chive Drop Biscuits

I adapted this from a Bon A ppetit and Cooking Light recipe
Recipe Introduction
A delicious easy drop biscuit that can be whipped up at the last minute.
List of Ingredients
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon sugar
1/2 teaspoon salt -- (1/4 to 1/2 t.)
1/4 teaspoon baking soda
1 1/2 tablespoons unsalted butter
2 tablespoons chopped fresh chives
2 ounces freshly grated sharp cheddar cheese (about 1/2 cup)
1/2 cup low-fat buttermilk (may need a little more)
Topping:
1 tablespoon melted unsalted butter
1/4 teaspoon garlic powder -- (1/8 to 1/4 t.)
small pinch of salt -- optionalRecipe
1. Preheat oven to 425º.
2. Combine first 5 ingredients in a large bowl; cut in butter with a pastry blender until it resembles coarse meal. Stir in chives and cheese. Add buttermilk, stirring just until flour mixture is moistened. Don't overmix.
3. Drop batter by heaping tablespoons (I use my cookie scoop) onto a greased baking stone or baking sheet coated with cooking spray or lined with a Silpat. Bake at 425º for about 15 minutes or until lightly browned.
Mix topping ingredients and immediately brush over hot biscuits.
Yield: 8 biscuits
NOTES : Can use the green part of a green onion in place of the chives, if desired. You can use salted butter in these if that's all you have. Recipe doubles easily.
