Fruit Cocktail Bread
If I remember right, this tasted more like pound cake than "bread".
List of Ingredients
8 ounces cream cheese -- softened
1 cup butter or margarine -- softened
1 1/2 cups sugar
1 1/2 teaspoons vanilla extract
4 large eggs
2 1/4 cups all-purpose flour
1 1/2 teaspoons baking powder
1 cup fruit cocktail -- drained
Powderd Sugar Glaze (powdered sugar, a little milk, and a dash of vanilla extract), optional
Recipe
Preheat the oven to 325 degrees.
Combine the cream cheese, butter, sugar and vanilla in a large bowl and beat until light and fluffy.
Add the eggs and beat until well blended.
Fold in a mixture of the flour and baking powder.
Stir in the fruit cocktail.
Pour into 2 greased and floured 9x5 inch loaf pans. Bake for about 1 hour.
Cool in the pans for 10 minutes. Remove to wire racks to cool completely.
Garnish with a drizzle of powdered sugar glaze, if desired.
Yield:
"2 loaves"
