    For those out there, like me, who haven't mastered pizza making...here's a great recipe for you that I found in King Arthur Baker's Companion. It's so easy and my family loved it! I used a 9x13 pyrex pan and it didn't get quite as brown on the bottom as I would have liked, so I might put the pan on a hot stone next time or either lower the rack. And they're not just whistling dixie when they call this "deep-dish"! I measured the finished product and it was about 1 3/4 inch high. You could easily make it in a slightly larger pan if you wanted it a little thinner or needed to "stretch" the recipe. The leftovers heated beautifully in the oven the next day.

    List of Ingredients




    1 1/4 cups lukewarm water (look on your pkg. of yeast to find the exact temperature)
    3 1/4 cups Pizza Perfect Blend or 2 3/4 cups King Arthur Unbleached All-Purpose Flour + 1/2 cup semolina flour (I didn't have semolina and just used 3 1/4 cups all-purpose flour)
    2 tablespoons olive oil
    1 tablespoon Pizza Dough Flavor (optional, but delicious) (I didn't have)
    2 teaspoons instant yeast
    1 1/2 teaspoons salt
    1 cup of your favorite pizza sauce
    2 teaspoons Pizza Seasoning or mixed Italian herbs (I didn't measure and used Penzey's Italian seasoning and McCormick's Pizza seasoning that comes in those "grinders")
    1 1/2 cups grated cheese of your choice (I used and 8 oz. bag of Italian blend cheese)
    additional toppings of your choice (I used turkey pepperoni, turkey Italian sausage, and mushrooms)

    Recipe



    Grease (or oil with olive oil) a 9 x 13-inch or 12 x 12 inch pan. Mix and stir the dough ingredients together to form a slightly sticky soft dough. Let the dough rise, covered, for 30 minutes, then place it in the pan. Let it rest for 10 to 15 minutes, then pat and stretch it to cover the bottom of the pan. Let it rest, covered, for 30 minutes.

    Spread the pizza with the sauce, and bake it in a preheated 425°F oven for 15 minutes (I might go a couple minutes longer next time). Remove it from the oven, and add the seasoning, cheese, and toppings. Return it to the oven and bake for an additional 10 to 15 minutes, until the cheese is bubbly and the edges are golden brown. Yield: six large pieces.

    Nutrition information per serving (1 piece with sauce and cheese, 179g): 430 cal, 14g fat, 17g protein, 60g total carbohydrate, 2g sugar, 6g dietary fiber, 25mg cholesterol, 1260mg sodium.
