Sweet and Sour Pork

Recipe Introduction
Tangy and delicious. And lower in fat than typical sweet and sour pork. My family loves it.
List of Ingredients
1 lb pork tenderloin -- trimmed of all visible fat, cut into 1/2-inch to 3/4-inch cubes
2 Tbs cornstarch
1/3 cup water
1/4 cup rice vinegar
1/4 cup granulated sugar
3 Tbs ketchup
2 Tbs reduced-sodium soy sauce
1 Tb canola oil
1 Tb minced peeled fresh ginger
2 cloves garlic -- minced
1 medium green bell pepper -- seeded and cut into 1/2-inch pieces (I use 2 red peppers and cut into bigger pieces)
1 can pineapple chunks in juice -- (8 ounce) drained (I use a 20 oz. can)

Combine pork with 1 Tbs. cornstarch in a medium bowl; toss well to coat and set aside. Combine the remaining 1 Tbs. cornstarch, water, vinegar, sugar, ketchup, and soy sauce in a small bowl; set aside.
Heat a nonstick wok or large, deep skillet over medium-high heat until a drop of water sizzles. Swirl in the oil, then add the pork. Stir-fry until almost cooked through, 2 to 3 minutes. Add ginger and garlic. Stir-fry until fragrant, about 30 seconds. Add bell pepper and pineapple; stir fry until crisp-tender, about 3 minutes. Add vinegar mixture and cook, stirring constantly, until the mixture boils and thickens and the pork is just cooked through, 1 to 2 minutes. Serve over basmati rice.

NOTES : I made this a while back but I used a couple of red peppers instead of the green pepper and used a large 20 oz. can of pineapple chunks--8 oz. wouldn't have been enough for me. Can't remember if I added anything else. I thought it might be too tangy for the family but they LOVED it! I was shocked. And yes, there is a generous amount of sauce and I served it w/basmati rice. I need to make this again soon.
