    Cheesy Chicken Quesadillas

    List of Ingredients

    8 oz. Mexican blend shredded cheese -- or Monterey Jack
    2 to 3 green onions -- chopped
    1 to 2 pickled jalapeno peppers -- finely chopped, or fresh seeded jalapenos to taste
    2 Tablespoons cilantro -- chopped (more or less to taste. I like a lot!)
    1/2 teaspoon cumin
    1 package Mexican seasoned cooked chicken (Louis Rich) -- or cooked shredded chicken
    6 to 8 flour tortillas
    butter or Pam or spray butter or oil (to cook them with)
    sour cream
    salsa
    guacamole

    Recipe

    Combine 1st 5 ingredients; stir well.

    Add chicken (as much or as little as you want).

    Take mixture and divide among 3 or 4 tortillas. Top them with the remaining tortillas.

    Cook quesadillas in a skillet over medium or med-high with one of the things listed above (I think I used I Can't
    Believe it's not Butter Spray). Lightly brown on each side.

    Cut each quesadilla in 6 or 8 wedges and serve with sour cream, salsa and guacamole.
