    Corn Casserole

    This is a family favorite that we often serve at Thanksgiving, Christmas, or Easter dinner.

    List of Ingredients

    1 small onion -- chopped
    1 small green pepper -- chopped
    1/2 cup butter (can be reduced)
    16 oz. can whole kernel corn -- do not drain
    16 oz. can cream-style corn
    8 oz. pkg. cornbread mix -- (I use Jiffy)
    3 eggs -- beaten
    1 cup shredded cheddar cheese
    1 cup sour cream

    Recipe

    Saute onion and green pepper in butter in skillet.

    Combine contents of skillet with undrained corn, cream corn, Jiffy, and eggs in bowl; mix well.

    Spoon into 1-1/2 quart baking dish that's been sprayed with Pam.

    Top with cheese and sour cream. Don't stir in, just spread over the top.

    Bake at 350 degrees for 45 minutes.
