Ginger-Lime Sweet Potatoes

Recipe Introduction
This is a delicious and different side dish. A nice change of pace from the typical sweet potato casserole.
My notes are at the bottom.
List of Ingredients
1/3 cup all-purpose flour
10 cups thinly sliced peeled sweet potato (about 3 pounds)
1/4 cup butter
1/3 cup packed light brown sugar
1 tablespoon lime rind
2 tablespoons fresh lime juice
1 tablespoon grated orange rind
1 tablespoon grated peeled fresh ginger
1 teaspoon low-sodium soy sauce
1 teaspoon salt
1/4 teaspoon black pepper

Preheat oven to 425°.
Lightly spoon flour into a dry measuring cup; level with a knife. Combine flour and potato in a large bowl; toss well.
Melt butter in a small saucepan over low heat. Add sugar and next 7 ingredients (sugar through pepper); cook 4 minutes or until sugar dissolves. Pour over potato mixture; toss well. Spoon mixture into a shallow 2-quart casserole dish coated with cooking spray.
Cover and bake at 425° for 55 minutes or until tender. Let stand 10 minutes.
Yield: 12 servings (serving size: 1/2 cup)

NOTES : Loved this! I cut the recipe in half and baked it in a deep pie plate. I didn't measure precisely and added the juice of a quarter of an orange. I just zested about 1 1/2 medium limes and a good sized orange. I think I also used a tiny bit more brown sugar. And I didn't measure my cut sweet potatoes either (which was a snap to slice in my food processor). I weighed 3 and it came to about 1.8 lbs. And I used kosher salt like I do in all my cooking.
I served it with grilled thick-cut pork loin chops w/Penzey's Greek seasoning and whole green beans sauteed w/a little butter and topped with toasted sliced almonds. Yum! Also, this states 12 servings. Not in my house! The 1/2 recipe was proabably 4 servings. Maybe if you were serving it w/a huge holiday meal with lots of sides.
