Recipe Introduction
A delicious and different rice dish. Good with grilled pork or chicken.
List of Ingredients
2 1/2 cups water
1 cup uncooked long-grain rice
1/2 cup chopped dried pineapple
2 teaspoons butter
1/2 teaspoon grated lime rind
1/4 teaspoon salt
1/4 cup chopped fresh cilantro
1 tablespoon chopped green onions
2 1/2 tablepoons fresh lime juiceRecipe
Bring 2 1/2 cups water to boil in a medium saucepan; add rice and next 4 ingredients (rice through salt). Cover, reduce heat and simmer 20 minutes or until liquid is absorbed. Remove from heat; stir in cilantro, onions and juice.
