Vanilla Sweet Potatoes

These are SO GOOD! I use my homemade vanilla that I make with rum in these.
List of Ingredients
2 lbs. sweet potatoes
3/4 c. 1% milk
1/4 c. packed light brown sugar
2 T. pure vanilla extract
2 T. butter -- softened
Recipe
Pierce potatoes with a fork, arange in circle on paper towels in microwave. Microwave at High for 10 minutes or until tender, rearranging potatoes at 5 minutes. (can also be baked in the oven). Wrap in a towel and let stand 5 minutes.
Peel and mash potatoes. Combine with milk and remaining ingredients. Place in a 1-quart casserole, cover and microwave on high for 7 minutes or until thoroughly heated.
